If you're planning to visit Cochise County's u-pick farms, we've got some great recipes for you. Try the Peach Cream Pie, Good Squash, or Glazed Pecans with the bounty you pick! Recipes courtesy of Apple Annie's and Lee's Pecans.

Frozen Peach Cream Pie

1 can (14 oz.) sweetened condensed milk
Juice of 2 large lemons (about 1/2 cup)
1 c. heavy cream, whipped
2 c. fresh Apple Annie's ripe peaches, sliced and cut into small pieces
1 9-inch graham cracker crust, chilled 

Mix condensed milk with lemon juice. Mixture will thicken. Fold thickened mixture into whipped cream and peaches. Pour into chilled crust. Freeze until firm. Serve frozen.

Good Squash

5 lbs. Apple Annie's mixed summer squash, sliced
3 T. butter
1 t. salt
1/2 t. pepper
1/2 c. mayonnaise
3/4 c. milk
2 c. jack cheese, grated 

Cook squash in water until tender, drain well. Mix in butter, salt and pepper. Combine remaining ingredients and pour over squash, mixing well. Pour mixture into a large, buttered casserole dish and bake at 400 degrees for 15-20 minutes.

Glazed Pecans

1 pound pecan halves
1 egg white
1 tablespoon water
2/3 cup superfine sugar
1 teaspoon salt
2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon ground allspice
1/2 teaspoon ground coriander

Preheat oven to 250 degrees. Whisk egg white and water in medium size bowl until very foamy. Stir in pecans, mix well. Pour into sieve and drain 3 minutes. Combine sugar, salt, ginger, cinnamon, allspice and coriander in medium size zip lock bag, shake to mix. Add drained pecans and shake well to coat. Spread pecans on large cookie sheets, making sure they do not touch.

Bake for 15 minutes, stir and spread out again. Lower oven temperature to 225 degrees. Bake, stirring occasionally, for 1 hour and 15 minutes or until pecans are very dry and crispy. Turn oven off, and let pecans cool with the oven door open. Store in airtight container. Makes about 4 cups
